Quick, easy and made with simple ingredients! Mascarpone cheese makes the orzo super creamy, and the lobster broth is full of amazing flavor!

For Butter Poached Salmon
Directions
Pat salmon dry with a paper towel, salt and pepper both sides.
Make Lobster Orzo and Cheese. Add a tablespoon of butter to a large saucepan. Heat on medium heat and add 1 cup of chopped spinach. Sauté a few minutes until wilted.
Add in orzo and stir.
Next add in lobster broth. I use Better Than Bouillon and it tastes awesome. Turn down the heat to a simmer and cover saucepan with a lid, stirring occasionally for about 10 minutes. Once liquid has absorbed remove from heat and add 2 heaping tablespoons of mascarpone cheese and stir.
While orzo cooks add 2 tablespoons of butter to a medium-small pan. Melt the butter, get the pan hot and add in your salmon. Brown the salmon and add more butter to the pan, spooning the hot butter over the salmon fillets continuously as the cook.
Once orzo is tender and salmon is poached, add a generous spoonful of lobster and cheese orzo to your plate and a butter poached salmon fillet. Enjoy!
